Costers del Siurana have been experimenting for a number of years with barrel fermented whites before finally releasing Kyrie for the first time in the 1999 vintage. Unusually, the blend for this wine is made in the vineyard, with the different varieties picked together and fermented together. This makes the point of ripeness critical, as one variety may be riper than another - the trick being to get the more mature notes from the earlier (hence riper) varieties, and the freshness from the later ripening varieties that are picked whilst still slightly green.
